Okay… it is H-O-T. Which can only mean two things:

  1. I’m grilling a whole lot more than usual, and
  2. My garden is KICKING—especially the tomatoes.

And because I’m a Southern girl through and through, you know my house is overflowing with tomatoes right now. Like… they’re everywhere. Every bowl, every counter.

So today, I’m coming at you with a little inspo for what to do with allllllllllllll those tomatoes—if you’re lucky enough to be drowning in them like me (or if you’re hitting up your local farmer’s market and pretending you grew them—no shame in that game).

I’ve got the easiest, healthiest, low-ingredient… beautiful soup ever. And also—can we talk about this salad I made? You’re gonna swoon. It’s literal heaven in a bowl.

BUT—before we dive into that deliciousness, I need to take a second to brag on my gorgeous girls. I pep talk them every morning...looks like it's working.😆

TOMATO SOUP

Okay, first up is this soup. Please go check out how I made it on IG & see how easy this is. You can roast your veggies in a deep pan or you can put it all in the crockpot.

These days, I prefer the crockpot...cause NO to the oven in 100° weather, right?

Ingredients are simple:

  • 10+ fresh tomatoes
  • 1 red onion
  • 1 head of garlic
  • olive oil, salt & pepper & any fresh herbs you want.

That's it.

It's so easy! You actually roast the garlic & it turns sweet in the crockpot.

It's simply fresh.

Pair it with a grilled cheese, or throw in some frozen tortellini & fresh spinach for another option.

YUM!

**If you have an emulsion blender, this is the WAY to get this soup blended up. Just do it right there in the crockpot. Otherwise, you're gonna have to do it in your high speed blender. Still easy, but a little more to clean.

GRILLED CHICKEN & PEACH SALAD

Okay, I hope this gets your creative juices going this weekend, because this is one that's low effort high reward.

Your family -- you especially -- are gonna swoon over this summer in a bowl situation.

  • Grilled Pork Tenderloin
  • Mixed Salad Greens
  • Goat Cheese Crumbles
  • Grilled Peach halves
  • Grilled Scallions

Grill your pork with a marinade of your preference. Cut those beautiful Georgia Peaches in half, brush lightly with a little olive oil & toss on the grill for like 2 minutes. We're not trying to "cook" them -- just getting a few grill marks.

Do that with the scallions, too.

Slice that pork, dice those peaches & scallions--then build your beautiful summer sensation.

Oh! I drizzle mine with a balsamic reduction I got at Aldi, but you could use any number of dressings: poppyseed, ginger, vinaigrette!
