Hey Reader,
I'm going to be honest with you. I just got back from a whirlwind trip to Epic Universe with my boys and I am RUNNING on fumes.
We're talking Nintendo World, a baseball tournament on one side, a mountain bike race on the other, and Easter Sunday coming in hot.
I haven't stopped moving in two weeks....or three...I'm not sure, I've lost count at this point!
So, this week, I'm coming at you with what I bet is the craziest recipe you'll see in your inbox this entire weekend.
🐰VIRAL EGG PUDDING
Last year, as some of you may remember, my kid looked at our basket of freshly collected eggs🐣 (we have chickens, so we have approximately a bajillion of them at all times), and said "mom, I saw someone make chocolate pudding out of boiled eggs."
I should have said no.
I did not say no.
Listen, I went in fully expecting to report back that it was a disaster.
The pudding was incredible. Smooth, rich, actually tasted like real chocolate pudding... and my kid was SMUG about it. Rightfully so.
We have so many eggs right now that I'm genuinely relieved to have a new way to use them. So, I'm pulling this one out of retirement & doing it again!

If you're sitting on a pile of Easter eggs this weekend and you're not sure what to do with them besides hide them and find them and eat approximately fourteen Reese's eggs before 9am....this one's for you.
