Okay, so when I say “reset,” I don’t mean an overhaul. Sometimes it’s just simplifying.

This week I made one of my fan favorites — Crockpot Roasted Tomato Soup — but this time I tossed in two small acorn squash (that were a little past their prime) with the tomatoes, onion, garlic, and olive oil.

The whole house smelled amazing, and dinner felt done before I even had to think about it. Cozy, filling, and so budget-friendly....it was almost the perfect fall day🍂....if it wasn't 90° outside😓

🍂FALL RESET

Here’s how I did it: 6–8 fresh tomatoes (quartered), one head of garlic (top trimmed, but kept in tact), two small acorn squash (halved), one sweet onion (quartered). Drizzle everything with olive oil, salt, pepper.

🍲Throw it all in the slow cooker on low for 6-8 hours, then blend it smooth. Swirl in cream if you want. Add bone broth to thin to desired thickness.

Serve with grilled cheese or bread, and call it a night.

That’s a reset. Not a meal plan makeover. Not a big production. Just one recipe that makes dinner lighter.
