Hey Reader,

Let's talk about this casserole.

My Shortcut Enchilada Casserole is usually just a regular enchilada situation minus the rolling. Corn tortillas layered instead of stuffed.

Quick, easy, zero rolling, period.

Except enchilada sauce has been sitting on my grocery list for TWO MONTHS. I see it every single time and somehow it never makes it into the cart....because #ALDI.

📌Fun Fact: They don't carry enchilada sauce. I know. It's weird. But, also, I guess there aren't enough enchilada makers out there buying the sauce to make it worthy of the shelf space. Why? Because rolling enchiladas is a whole process -- and we don't have time for all that.

Plan B.

Here's the thing though. Come hell or high water, I was making that casserole this week.

I didn't skip making the casserole just because I didn't have the sauce. Yes, that was testing the boundaries of my Recipe Redo idea, but desperate times & all.

I just decided to make it with whatever was actually in my kitchen.

This time that was street corn dip from Aldi, pre-cooked chicken, spinach (I'm a lady of a certain age, we throw spinach in everything now, it's the law), cheese, black beans, green salsa, and tortillas.

Layered it all up. Crushed Fritos on top, because obviously.

And, friend -- it was so good.

That's Recipe Redo. You don't need the exact ingredients, you need the structure. Layer, bake, done.

Where are my tailgaters?

It's SEC football season, which means Fridays around here are cocktails and apps on Instagram. I'm a proud UGA grad, so yes there's some go dawgs energy involved....

....and, yes I will absolutely make you a drink while we talk about it.❤️🖤🩶

Did You Know?🤔

And, many of you know this is a one woman show around here, but it may surprise a few of you to learn that.

I hope these tips & recipes help you, inspire you, or at minimum make you slightly lighter in a small way.
