Okay, plot twist — it’s Mardi Gras season, which is honestly one of my favorite times of year.

I’m not there this year (sadly 😭), but that doesn’t mean I’m skipping the vibes. If anything, it just means we’re bringing them home.

Between Mardi Gras and Valentine’s Day landing back-to-back, I vote for food that feels indulgent, cozy, and a little special....without requiring a whole production.

So, today I’m sharing one of my go-to comfort dishes with big Cajun energy.

💜 One-Pot Cajun Alfredo (Weeknight Edition)

This is rich, flexible, and perfect whether you’re feeding your people or just yourself....and it's got such a great CHEAT!

Protein (pick one):

  • Shrimp
  • Chicken
  • Smoked sausage (or a combo — I won’t judge)

Veg add-ins (optional but great):

  • Bell peppers
  • Celery & Onions & Carrots
  • Spinach
  • Even leftover roasted veggies

Seasoning:

  • Cajun seasoning (store-bought is totally fine) with a little heat

Star of the show: Jarred Alfredo. BOOM💥It's not just for Italian dinners, mama!

QUICK HOW-TO:

  1. Cook protein in a large skillet until just done. Remove and set aside.
  2. In the same pan, sauté veggies (if using) until tender.
  3. Add your favorite (preferably garlicy) jarred alfredo sauce.
  4. Simmer gently, then add veggies & protein back to the pan.
  5. Top your fav pasta (I like shells) & finish with extra parm!

✨ Cozy. Creamy. Just spicy enough. ✨ Feels like a celebration without the cleanup.

Pour a drink & call it Mardi Gras and Valentine’s Day.
