If you're reading this on Friday, picture me chaperoning a bus full of middle schoolers...
Yep, I volunteered to go on an all day field trip.
So, just know with 100% certainty that whatever you're doing right now is hands down better than my current situation.
Cause I'm probably sitting on a weirdly sticky bus seat listening to two 7th graders argue about a something they saw on Youtube or Takis. Who knows.
That means, tonight mama's gonna want a cocktail, so I've got something fabulously spring + Trader Joe's inspired coming your way.
But first, let me give you this....
In My Kitchen
The last two weeks I've been on a refresh vibe.
I've been eating lighter (yes, I am a lady of a certain age & I'm trying over here -- weighted vest & all). And, I wanted to show you how I'm lightening up my dinner routine a bit.
Please know: I refuse to start cooking a whole new set of complicated dinners just because the seasons change or I'm trying to eat 50,000g of protein.
No one has time for that.
So, instead I'm using my fav Supper Club trick: Recipe Redo.
Inside Supper Club we talk a lot about how you don't need a million new recipes… you just need to remix the ones your family already loves.
Same dinner. Just a little twist.
For example:
Taco night → Taco salad Spaghetti → Italian chopped salad Chicken & rice → Chicken wraps Casserole → Grain bowls
Suddenly dinner feels lighter, fresher, and a little more springy--without you having to learn anything new.
BOOM💥
